September 8th Meeting:
Impossibly Easy Bacon Pie
12 slices bacon, crisply cooked and crumbled
I cup shredded swiss cheese (Don't worry if you don't like swiss, I don't either but it works best in this dish!)
1/3 cup chopped onion ( I usually use green onions to give it some color)
1/2 cup bisquick
1 cup milk
1/8 tsp. pepper
2 eggs
Heat oven to 400 degrees. Grease 9" pie plate. Sprinkle bacon, cheese and onion in pie plate.
Stir remaining ingredients until blended. Pour into pie plate.
Bake 35 to 40 minutes or until knife inserted in center comes out clean. Let stand 5 minutes before serving

September 22nd Meeting:
Breakfast Casserole
1 16 oz. package ground pork sausage
12 eggs
1 can cream of mushroom soup
1 can evaporated milk
1 can sliced mushrooms, drained
1 32 oz. pkg. frozen potato rounds, southern hashbrowns, or tator tots
½ cup grated Cheddar cheese
Place sausage in a skillet over medium heat, and cook until evenly brown. Drain and set aside. Preheat oven to 350 °F. Lightly grease a 9x13 baking dish. In a large bowl, beat together the eggs, soup and milk. Stir in the sausage and mushrooms and pour into prepared dish. Mix in the frozen potatoes. Bake in preheated oven for 45-50 minutes. Sprinkle with cheese and bake and additional 10 minutes or until cheese is melted. (Can be made the night before. Refrigerate mixture and bake the next morning. Do not add cheese until last 10 minutes of baking)

Pumpkin Apple Streusel Muffins
2 ½ cups all-purpose flour
2 cups sugar
1 Tbs. pumpkin pie spice
1 tsp. baking soda
½ tsp. salt
2 eggs, lightly beaten
1 cup canned pumpkin puree
½ cup vegetable oil
2 cups peeled, cored & chopped apples
2 Tbs. all purpose flour
¼ cup sugar
1/2 tsp ground cinnamon
4 tsp butter
Preheat oven to 350 ° F. Lightly grease 18 muffin cups or use paper liners. In a large bowl, sift together 2 ½ cups flour, 2 cups sugar, pumpkin pie spice, baking soda, and salt. In a separate bowl, mix together eggs, pumpkin, and oil. Add pumpkin mixture to flour mixture; stirring just to moisten. Fold in apples. Spoon batter into muffin cups. In small bowl, mix together 2 Tbs. flour, ¼ cup sugar and ½ tsp. cinnamon. Cut in butter until mixture resembles coarse crumbs. Sprinkle evenly over batter. Bake in preheated oven for 35-40 minutes, or until a toothpick inserted comes out clean.

Sausage Balls
Mix together 6 cups Bisquick, 2 lbs. pork breakfast sausage, 2 cups grated cheddar cheese and 1 cup milk. Form into balls about the size of a walnut (1 in.). Place one inch apart on a lightly greased cookie sheet and bake at 350 degrees for 20 minutes or until golden brown. Makes 120. You can cut this recipe in half if you do not want that many balls.

Fruit Salad
1 (20 ounce) can pineapple chunks
1 (8 ounce) can crushed pineapple, undrained
1 cup sour cream
1 (3.4 ounce) package instant vanilla pudding mix
2 medium ripe bananas, sliced
2 cups fresh blueberries or frozen blueberries, thawed
2 ripe peaches, peeled and sliced
2 cups sliced fresh strawberries
1 cup seedless green grapes
1 cup seedless red grapes
Drain pineapple chunks, reserving juice; refrigerate pineapple. add water to juice if necessary to measure 3/4 cup. In a bowl, combine the juice, crushed pineapple, sour cream and pudding mix until blended. Cover and refrigerate for at least 3 hours. In a large bowl, combine the bananas, blueberries, peaches, strawberries, grapes and pineapple chunks. Spread pudding mixture over the top. Garnish with mint if desired. Serves 12

Cucumber Salad
3 (11 ounce) cans of mandarin orange segments, well drained
¾ cup poppy seed salad dressing (or creamy cucumber salad dressing)
3 cucumbers
Peel and slice cucumbers in half lengthwise. Remove seeds if desired, and slice into half-moon slices. Combine all ingredients and refrigerate until ready to serve (serves 12)

Easy Peach Cobbler
2 large cans of peaches
1 cup brown sugar
cinnamon
1 box butter recipe cake mix
1 1/2 sticks margarine, cut up
In a 13x9 inch baking dish, layer ingredients:
peaches
1/2 cup brown sugar
sprinkle with cinnamon
cake mix (dry)
1/2 cup brown sugar
sprinkle with cinnamon
pats of margarine
Bake for 1 hour in a 350 degree oven. Serve with cool whip or vanilla ice cream.

Breakfast Casserole (recipe by Paula Deen)
5 slices thick-sliced white bread, crust and all, buttered and cubed
1 pound mild saussage, cooked, crumbled, and drained
3 cups grated extra-sharp cheddar cheese
4 eggs
2 cups milk
1 TSP dry mustard
1 TSP salt
1 TSP hot sauce
Spray a 1 1/2 quart casserole dish w/ vegetable oil cooking spray. Place the bread cubes in the casserole. Evenly distribute the sausage over the bread cubes. Sprinkle evenly w/ the cheese. Combine the eggs, milk, mustard, salt and hot sauce and mix well. Pour the egg mixture over the bread. Cover w/ plastic wrap and refrigerate overnight. The next morning, remove the casserole from the refrigerator and allow it sit on the counter for 15 minutes while you preheat the oven to 350. Remove the plastic wrap, place the casserole in the oven and bake for 1 hour.

October 6th Meeting:
Pumpkin Muffins
1 box Spice Cake mix
1/4 cup of oil
1 can of pumpkin puree
1 small kid size container of apple sauce
1 tsp. of cinnamon
1 tsp. of vanilla
Optional: 3/4 cup nuts and chocolate chips mixed in or put on top
Bake according to package directions. These are super duper moist because of the pumpkin and applesauce. If you want to sneak in a veggie and have your kiddos and spouses not detect them then this is the recipe for you!

October 13th Meeting:
Egg Casserole
12 eggs
1 lbs. Sausage, cooked & drained
1 lbs. cheddar cheese
1 - 8oz. sour cream
1 tsp. salt (opt.)
bread, buttered and crust removed
Remove crust from bread slices and butter each slice. Line casserole dish with bread slices, buttered side down. Spread layer of cool cooked sausage on top of bread. Beat eggs, sour cream, and salt. Blend in grated cheese and pour over sausage. Refrigerate overnight. Bake @ 325 for 1 hour.

Stained Glass Salad
1 can peach pie filling
1 can crushed pineapple, drained
1 sm. can mandarin oranges, drained
1 lg. box strawberries, thawed
3 - 4 bananas, sliced
Poppy seed, optional
Mix all together, chill and serve. Very good. ( Good over Ice Cream too.)
